As soon as Aaron leaves for a few days, I swear I forget how to be a proper adult. Faced with the (suddenly) overwhelming task of deciding what to make for dinner, I was racking my brain for healthy ideas. Looking into the vegetable drawer proved to be futile – there were a handful of herbs. That’s it. It was already pretty late, so I didn’t feel like going to the grocery store. One healthy thing we did have was fruit. Immediately, I knew I wanted to make French toast. The good girl in me thought of making a berry sauce to be ~healthy~ but the bad girl in my wanted maple syrup SO. BAD. Good and bad met the maple berry sauce was born. I’ve always loved to make my French toast with bagels, so a blueberry one was the perfect accompaniment for the sauce. This recipe is for one serving, so you can have this all by your baddie self!

Note: the sauce is sweet, but not overly so. If you like a sweeter sauce, just add more maple syrup.

Berry Maple Sauce
  1. Put berries and maple syrup in a saucepan over medium heat.

  2. Gently mash the berries as they heat up, stirring the mixture frequently. Once mixture is heated through, turn to low and let simmer until the French toast is ready.

  1. Put a generous amount of butter in a frying pan over medium-high heat.

  2. In a bowl, whisk eggs until well combined.

  3. Soak each half of the bagel, making sure to let the mixture really soak in.

  4. Once butter is melted, put the bagels halves in the pan. Sprinkle cinnamon on the face-up side. Let the bagel heat through for about 5 minutes, then flip them. Sprinkle cinnamon on the other side and let it heat through another 5 minutes. Turn over again and let the bagel cook another 2-3 minutes, repeating on the other side.

  5. Transfer to a plate and pour the maple berry sauce all over the french toast.
