When fall hits and the weather gets cooler, I begin to majorly crave comfort foods. Anything I can pair with mashed or roasted potatoes is perfect in my books. So, when the hubby and I checked out a local restaurant, Paradiso, for the first time, I was delighted to see a braised beef short rib roast. It did not disappoint. It was every bit the perfect, tender, flavorful beef I expected it to be. Served atop a bed of creamy, dreamy mashed potatoes, it was definitely my ideal fall meal.

Since we had that meal, I was craving that same kind of flavor and texture again and again. Sure, we could always keep going back for more, but sometimes we like to make our own versions of our restaurant favorites. We decided to use Guinness beer as our base for the roasting liquid since it has such deep, rich flavors that pair well with beef. We also used onions, garlic and a few sauces and seasonings and we were ready for our own unique beef roast. The result was a tender, flavorful roast that will definitely be on our weeknight rotation for the fall.

  1. Preheat a large frying pan to medium-high heat. Rough chop the onions and garlic. Put the garlic in a slow cooker.
  2. Sautée the onions until they're softened and browned. Transfer half to the slow cooker and put the other half in a bowl.
  3. Place the entire roast in the same pan you used for the onions.

  4. Sear each side of the roast until it turns golden brown.
  5. Place the roast on top of the onions in the slow cooker.

  6. Cover the roast with the remaining onions.
  7. Pour the beef stock and Guinness on top of the roast and add the remaining ingredients. Set the slow cooker to high and let cook for at least 5 hours. More is better if you have the time.
  8. Once the meat is fully cooked through, taste it. Add salt, pepper and other seasonings if needed. Serve on top of mashed potatoes with a side of veggies.
