Where my husband and I live, there are a quite few restaurants that offer up a scrumptious baked brie skillet. Of course, each restaurant’s version is slightly different, but the one thing they all have in common is this: they’re delicious! Suffice it to say we’re both hooked on warm, melty brie concoctions.

The other day, we were grocery shopping and we came across some figs. The brie at sister restaurants Stonehouse and Lakehouse use figs in their recipes (if you’re in the Niagara region, I highly urge you to check out these restaurants). We also happened to have a brie round sitting in our fridge, just waiting to be enjoyed. We knew it was a sign: it was time to try making our own baked brie skillet. I don’t want to give too much away, but let’s just say that between the two of us, there wasn’t a single bite left once we were done with it.

  1. Preheat oven to 350°.
  2. Put olive oil in skillet with the garlic cloves. Coat all the cloves fully with the oil.

  3. Bake for 20 minutes or until the bottom of the garlic starts to turn brown.

  4. While garlic is roasting, slice figs into 10-12 slices each.

  5. Once garlic is finished roasting, push all the cloves to the outside perimeter of the skillet and put the brie round in the middle. Coat the top of the brie with about 2 Tbsp of the honey.

  6. Sprinkle some of the almonds (about 1/3 of them) all over the top of the brie.

  7. Place a layer of figs all over the top of the brie, then place the remaining slices around the brie.

  8. Sprinkle the remaining almonds all over the brie and figs, then pour the remaining honey all over everything.

  9. Bake in the 350° oven for about 10 minutes or until the brie is fully melted in the center. Serve with crostini, crackers or bread.
