Spring has sprung, but apparently Muskoka, Canada hasn’t gotten the memo. The sun was shining and it was a beautiful day as Aaron and I explored the beautiful towns of Huntsville and Bracebridge, but it was still considerably more chilly than back home a few hours south. There was still a significant amount of snow on the ground, but unlike back in Toronto area, the white powder only enhances the beauty of the landscape. As soon as Aaron leaves for a few days, I swear I forget how to be a proper adult. Faced with the (suddenly) overwhelming task of deciding what to make for dinner, I was racking my brain for healthy ideas. Looking into the vegetable drawer proved to be futile – there were a handful of herbs. That’s it. It was already pretty late, so I didn’t feel like going to the grocery store. One healthy thing we did have was fruit. Immediately, I knew I wanted to make French toast. Hey all! Guess what: Christmas Eve is exactly 3 weeks from today! In my family, we’ve always done our major Christmas celebration on the 24th instead of the 25th. At some point, we began a tradition where we’d open one stocking stuffer every hour on the hour until it was time to go to church for our Christmas Eve service.
