Guys, I have a confession to make: I’m obsessed with coconut right now! Maybe it’s the tropical Florida Keys air or maybe it’s because coconut is just so darn delicious – either way, I can’t get enough. So naturally, I had to take a mojito and coconut-ify (it’s a word now) it. With coconut rum and coconut soda water, it’s everything a mojito should be and then some. The vanilla agave harmonizes so well with the flavors and it’s simply a delicious, refreshing drink for a day at the beach. If you’re not able to get to a beach and you drink it in your living room with your eyes closed in a swimsuit while listening to reggae music, I won’t judge you, I promise. I’ll likely do the same thing once I go back home to Canada 😉

- 1 Whole Lime, juiced
- 1 Oz. Vanilla Agave Can substitute regular agave or vanilla simple syrup
- 10 Leaves Fresh Mint
- 1.5 Oz. Coconut Rum
- Coconut Soda Water Unsweetened
- Muddle mint leaves with lime juice and agave until the mint is abundantly fragrant.
- Add rum and stir.
- Fill the glass with lots of ice and top with soda water. Enjoy!
